WHAT IS LECHON?
Lechon, a whole spit-roasted pork dish, is a beloved and integral part of Filipino culture and cuisine. Often served as the centerpiece of special occasions and celebrations, it symbolizes hospitality and generosity.
The true origins of Lechon is disputed, but it is believed that the Spanish influence led to the naming of the dish.
There are regional variations of lechon, In Manila, it is eaten with liver based gravy, In the Visayas, the Lechon de Cebu or Cebuchon, is crispy, juicy and stuffed with the perfect blend of spices and aromatics and does not need sauce. Lechon de Cebu is what we offer, and might as well be the most well loved lechon of them all. Even Anthony Bourdain agrees and has declared it "the best pig ever."
